Veal Offal


	Tender and sweet, rich in vitamin A, it can simply be served cooked with salt and pepper. Prized for its tenderness, delicate flavor and its high iron content, our sliced veal liver offers multiple high end cuisine applications. Each piece weighs 113g (4 oz.) and is vacuum sealed to preserve freshness.

	Unknown before recent times, cheek meat is very tender and starting to make its place in the finest dishes of modern cuisine. Cheek meat, fondant and delicate, requires a slow cooking medium to low heat. Each case contains 2 bags of 2.5kg. Vaccum sealed to preserve freshness.

	A common preparation of sweetbreads, sweet and rich-tasting, involves soaking in salt water then poaching in milk, after which the outer membrane is removed. Once dried and chilled, they are often breaded and fried.

Veal Sweetbreads


	Historically renowned, veal tongue is appreciated for its rare and exotic taste. It is recognized today as a true delicacy. For optimal results and exceptional tenderness, this piece of meat must be slow cooked. High in protein, rich in minerals and vitamins, tongue meat is an excellent source of iron. Each case contains 6 pieces individually vacuum sealed and weighs approximately 700g.
