Portion Control Cuts


	Our delicated cutlet portions are lean cuts of veal, cut from the boneless leg muscle. Pieces are delicated, sliced thinly, portioned and pounded for optimum tenderness. Available in portions of 55g (2 oz.), 85g (3 oz.), 115g (4 oz.) and 140g (5 oz.), vacuum sealed to preserve freshness. We offer bulk packs for a more economical option. Average weight per case 4.5kg (10lbs.).

Grain Fed Veal Delicated Cutlet


	Veal medallions are pieces of lean veal, prepared from the boneless top sirloin, fully denuded and aged for optimum tenderness. Available in portions of 85g (3 oz.) and 115g (4 oz.) vacuum sealed to preserve freshness. We offer bulk packaging for a more economical option. Average weight per case 4.5kg (10lbs.).

Grain Fed Veal Medallions


	Meat used for our breaded veal cutlet is prepared using the outside round of the boneless leg. Pieces are delicated, thinly sliced, portioned and pounded. Portions are coated in a breadcrumb mixture seasoned with a savory signature blend of spices. Available in 115g (4 oz.) portions with 40 pieces per case. Average weight per case 4.5kg (10lbs.).

Grain Fed Veal Breaded Cutlet


	Flapmeat, also known as bavette, is a popular cut in North America. To ensure a more tender and tasty product it is best to soak meat in a mixture of oils, herbs and acidic ingredients such as juices, vinegar or wine. Marinating will tenderize meat.

Grain Fed Veal Bavette


	Tender and sweet, rich in vitamin A, it can simply be served cooked with salt and pepper. Prized for its tenderness, delicate flavor and its high iron content, our sliced veal liver offers multiple high end cuisine applications. Each piece weighs 113g (4 oz.) and is vacuum sealed to preserve freshness.

	Easy to prepare for a variety of recipes; ideal for grilling, sautéing or on the stove. Fast cooking and generous portions for adults and children alike. Our pure patties are made from a mixture of high quality lean ground milk and grain fed veal. Available in portions of 113g (4 oz.), 36 portions per case, or 170g (6 oz.) and 30 portions per case. Average weight per case 4kg (9lbs.).
