Portion Control Cuts


	The scaloppini portions are lean cuts of veal, cut from boneless muscle leg, sliced thinly and aged for optimum tenderness. Available in vacuum sealed portions of 55g (2 oz.), 85g (3 oz.), 115g (4 oz.), 140g (5 oz.) and 170g (6 oz.).

Milk Fed Veal Scaloppini


	Our milk-fed rib chops, with its succulent taste and exquisite color, are lean cuts of veal prepared from a 6 bone rib rack, aged to perfection to deliver optimum tenderness. Our rib chops are French trimmed so that the rib bone is exposed. Available in a variety of sizes and vacuum sealed to preserve freshness. For that special occasion ask for our hotel style lollipop chop, trimmed the entire length of the rib bone until the rib eye. Average weight per case 4.5kg (10lbs.).

Milk Fed Veal French Cut Rib Chop


	For the real foodies, concentrated veal stock is a versatile product that forms the basis of many dishes, particularly soups and sauces. Our veal stock is prepared from the bones of veal, rich in natural concentrations of collagen, gelatine and nutrients. Veal stock provides a distinct rich flavor and a velvety smooth finish to any recipe. A case contains twelve 100g (3.5 oz.) portions for an average weight of 1.2kg (2.7lbs.). When a veal stock is reduced by half it is usually referred to as a "demi" or a "demi-glace".
