Cajun Veal Tacos

Ingredients

Serves 4


  • 680 g (1 ½ lbs.) ground veal
  • 185 ml (¾ cup) sour cream or as needed
  • 1 bunch of parsley (or cilantro), coarsely chopped
  • ½ head iceberg lettuce, shredded
  • 4 roma tomatoes, diced
  • 1-2 zucchini, diced
  • 1 large red onion, diced
  • 1 large red pepper, diced
  • 12 soft shell tortillas, individual size 7’’
  • 125 ml (½ cup) veal stock (or chicken stock)
  • 5 ml (1 tsp.) cumin
  • 5 ml (1 tsp.) cajun powder
  • 5 ml  (1 tsp.) ground black pepper
  • Extra-virgin olive oil, as needed, for sautéing
  • Lime wedges, for serving

Preparation

  1. Heat a large skillet or sauté pan over medium heat. Add enough olive oil to cover the bottom of the pan.
  2. Add the veal and half the spices. Cook 4-5 minutes.
  3. Add the zucchini, red pepper, the rest of the spices and half of the red onion. Cook for 2-3 minutes.
  4. Add the broth. Cook an additional 3-4 minutes on low heat or until the liquid has reduced.
  5. Garnish the tortillas with the veal, the sour cream, the lettuce, tomatoes, the parsley and the rest of the red onion.
  6. Serve with lime wedges on the side.
With the remaining fresh vegetables and herbs prepare a side salad.
