Quebec Lamb Chops marinated in a mixture of fine garden herbs

Marinated lamb chops are perfect for the grill, enjoy this recipe of Quebec raised lamb together with family and friends. Enjoy it for its succulent taste and exceptional tenderness.


Makes: 4-6
  • 12 lamb chops
Garden herb marinade
  • Fresh herbs, choice of: parsley, basil, thyme, rosemary, chives (choose at least 2)
  • 2 tbsp (30 ml)             olive oil
  • 1 tsp (5 mL)                honey or maple syrup
  • 1 tsp (5 mL)                strong mustard
  • Salt and pepper, to taste


  • Cut the herbs and keep some leaves for cooking.
  • Mix the ingredients of the marinade. Add the cut herbs to marinade.
  • Coat the chops with the marinade and set aside in the refrigerator for at least 1 hour.
  • Cook on the barbecue, adding the reserved cut herbs half way through the cooking process (around 4 to 8 minutes). Time will vary depending on the thickness of the chops.
  • Chops are best when served rosé.
